This large breed of dog was used in Europe to herd cattle to market. With great strength and courage, the Bouvier makes an excellent watch-dog and guide dog. Because of its excellent scenting ability, police in France use the breed as a tracker. The tail and ears are cropped where this procedure is allowed. In North America the breed is becoming more popular.
